Spicy scrambled egg curry

4 tspn oil, ? tspn salt, 1 onion sliced, 1 fresh tomato diced,  1 red chilli chopped, ? tspn chilli powder, ? tspn ginger paste, ? tspn garlic paste, 4 med eggs, ? diced red pepper, ? diced green pepper, fresh coriander for garnish.

Method:

1. Heat the oil in a large pan, add the sliced onion and fry until golden brown.
2. Add the chilli, chilli powder, ginger paste, garlic paste, diced tomato, red and green pepper and stir on a low heat to soften the peppers for about 1 minute.
3. Add the whole egg to the mixture and stir until all scrambled roughly for 3 - 5 minutes. Garnish with fresh coriander and serve with parathas.
It is a dry dish with no sauce. However, you can add chopped tin tomato, a little water, 1 tspn curry powder and cook for 5 minute to make a sauce, you will need to increase the spices.
