Ideal for summer.
200g fresh mushrooms cut in half
1 green pepper diced into 1 inch cubes
2 onions finely chopped
2 tomatoes chopped
2 tspn garlic paste
2 tspn ginger paste
2 green chillies finely chopped
½ tspn dry chilli powder
1 tbspn coriander seeds crushed
½ tspn fenugreek seeds dry roasted and crushed
Salt as required
½ tspn garam masala
½ tspn coriander powder
4 tbsn oil
Wash the mushrooms and cut in half if not already prepared.
Heat the oil and add the mushrooms, cook on a medium heat until cooked. Remove the mushrooms from the oil and put aside.
To the oil add the toasted and crushed coriander and fenugreek seeds and sizzle until golden, add the chillies and the chopped onions and stir until light brown.
Add ginger and garlic paste, cook for further few minutes.
Add the tomatoes, green pepper, salt and garam masala. Mix it all well, add the cooked mushrooms and toss it well.
Garnish with fresh coriander, coriander powder and chilli powder. Serve with a salad.
