curry on cooking femalefocusonline jan18This is such an easy and quick recipe to whip up for an afternoon tea, for unexpected guests and just because you fancy a winter treat! Who could resist a crumbly fruity scone with lashing of jam and cream? How do you eat yours - jam then cream or cream then jam? The Devonshire way is to split the scone in half with clotted cream and jam on top while the Cornish have jam first followed by cream.

225g self raising flour (plus extra for rolling)
50g butter
25g mixed fruit/sultanas
25g sugar
150ml whole milk (plus extra for brushing)
A pinch of salt

Time: 15 mins prep, 10-15 mins cook time.

Makes/Serves: 8-10

• Preheat the oven to 220°C (fan 200°C/425°F/Gas 7). Grease a large baking tray.
• In a large mixing bowl sift the flour with the salt.
• Rub in the butter until it resembles fine breadcrumbs.
• Add the sugar and dried fruit mix well.
• Slowly stir in the milk, mix until it comes together into a sticky dough.
• Turn onto a floured board; gently roll or pat out until about 1cm thick. Dip a pastry cutter into dry flour cut into 8-10 pieces.
• Place on the baking tray, brush the tops with a little milk. Bake in the oven for 10-15 minutes or until golden and well risen.
• Cool for a couple of minutes on a wire rack before serving.

Tips: Best served warm. If made ahead reheat in a low oven for 5 minutes. Serve with jam, whipped fresh double or clotted cream, or just plain butter.
