Sweet Corn and Red kidney Bean curry
1 cup of kidney beans, cooked - 1 cup of sweet corn - 3 tbs oil - 1 tbspn of ginger paste - 1 tbspn of garlic past - 1 large onion, finely chopped - 1/2 tspn of turmeric - Salt - 2 chopped tomatoes - 1 tspn chilli powder - 1 tspn of garam masala - 1 cup of water - Fresh coriander
Heat the oil and sizzle the onions until golden brown, add the garlic and ginger paste.Add turmeric, chilli, salt, garam masala, tomatoes and cook for a minute.Add the drained kidney beans and sweet corn and cook for a  further few minutes.Add the water and bring to boil. Cook on a medium heat for 10 minutes or until thick. Check for flavour and add extra if needed.Garnish with coriander and serve with rice.
