This is a tasty stir fry type of a quick dish for lunch.
3 tbspn oil
1 small onion finely diced
1 tspn of fresh ginger made into a paste
2 garlic cloves made into a paste
1-2 fresh chillies finely chopped
12oz king prawns shelled
8 cherry tomatoes halved
3 tbspn tomato puree
1 tbspn white wine vinegar
Pinch of caster sugar
Pinch of salt or to taste
Fresh coriander to garnish
Heat the oil until hot, add onions, garlic, ginger and chillies and cook for 2/3 minutes until soft.
Add the prawns and stir fry until pink, add tomatoes, puree, vinegar, sugar and salt.
Keep the heat high and stir until mixture is thick.
Serve with salad.
