3 big potatoes
10 almonds crushed with a rolling pin
50 gms of grated paneer or feta cheese
Few fresh mints leaves, chopped
1 green chilli, chopped
1/4 tsp garam Masala
1/4 tsp red chilli powder
Salt to taste
Juice of a fresh lemon
1 tsp of ginger paste
Boil potatoes in salted water until just tender, do not over cook them. When cooked cut in half length way and scoop out potato, leaving a hollow case to put the filling in.
Mix all the above ingredients along with the scooped out potato.
Check the flavours and add anything extra you wish...eg more fresh mint, chilli etc.
Fill the scooped potatoes with the filling, place on a baking tray and pour a little oil over the potatoes and on the tray, this will help to crisp them outside.
Bake the potatoes until crisp and brown and serve hot with a salad.
